German Kale Stew - Grünkohleintopf

Ingredients

  • 1 lb. Fresh Kale washed, stemmed, and chopped
  • 2 tbsp. Vegetable Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Chicken or Vegetable Broth
  • 1 lb. Potato peeled and diced
  • 1 lb. Smoked Sausage such as Kielbasa, sliced
  • 2 Bay Leaves
  • Salt and Pepper to taste
  • ½ tsp. Ground Nutmeg
  • 1 tbsp. White Wine Vinegar or Apple Cider Vinegar

Instructions

  • In a large pot, heat the vegetable oil over medium heat. Add the onion and sauté until translucent, about 5 minutes. Add the garlic and cook for another minute.

  • Stir in the chopped kale and cook for 3-4 minutes, until slightly wilted.

  • Add the chicken or vegetable broth, potatoes, sliced sausage, and bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the potatoes are tender.
    6 cups Chicken or Vegetable Broth, 1 lb. Potato, 1 lb. Smoked Sausage, 2 Bay Leaves
  • Season the soup with salt, pepper, and ground nutmeg. Add the vinegar to brighten the flavors and balance the richness of the soup.
    Salt and Pepper, ½ tsp. Ground Nutmeg, 1 tbsp. White Wine Vinegar
  • Remove the bay leaves and let the soup rest for a few minutes before serving. Enjoy with a slice of crusty bread for a complete, heartwarming meal.
