Classic German Carrot Salad

Ingredients

  • 4 cups Carrots grated or julienned, about 4-5 large carrots
  • ¼ cup Fresh Parsley chopped
  • 2 tbsp. Chives chopped
  • cup Apple Cider Vinegar or White Wine Vinegar
  • ¼ cup Vegetable Oil such as Canola or Sunflower Oil
  • 1 tbsp. Granulated Sugar
  • Salt and Pepper to taste

Optional Add-ins:

  • 1 cup Apple grated, about 1 medium apple
  • ½ cup Raisins pr dried cranberries
  • ½ cup Walnuts chopped, or sunflower seeds
  • ½ cup Sour Cream or plain yoghurt

Instructions

  • Prepare the carrots: Peel and grate the carrots using a box grater or julienne them using a mandoline slicer. Place the grated or julienned carrots in a large mixing bowl.
  • Prepare the herbs: Wash and finely chop the parsley and chives. Add them to the bowl with the carrots.
  • Prepare the vinaigrette: In a small bowl, whisk together the vinegar, oil, sugar, salt, and pepper until well combined and the sugar has dissolved. Taste and adjust the seasoning if necessary.
  • Combine the salad: Pour the vinaigrette over the carrots and herbs in the mixing bowl. Toss well to ensure the carrots are evenly coated with the dressing. If using any of the optional add-ins, fold them into the salad at this time.
  • Chill the salad: Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight. This allows the flavors to meld and the carrots to absorb the vinaigrette.
  • Serve: When ready to serve, give the salad a final toss to redistribute the dressing. Transfer to a serving dish and garnish with additional chopped herbs if desired. Enjoy chilled alongside grilled meats, sausages, or a crusty slice of bread.

Notes

Tip: Classic German Carrot Salad can be stored in an airtight container in the refrigerator for up to 3 days. It's a great make-ahead dish for picnics, barbecues, or meal prep.
