Ingredients

  • 4 cups Carrots grated or julienned, about 4-5 large carrots
  • ¼ cup Fresh Parsley chopped
  • 2 tbsp. Chives chopped
  • cup Apple Cider Vinegar or White Wine Vinegar
  • ¼ cup Vegetable Oil such as Canola or Sunflower Oil
  • 1 tbsp. Granulated Sugar
  • Salt and Pepper to taste

Optional Add-ins:

  • 1 cup Apple grated, about 1 medium apple
  • ½ cup Raisins pr dried cranberries
  • ½ cup Walnuts chopped, or sunflower seeds
  • ½ cup Sour Cream or plain yoghurt
