Obatzda - Bavarian Beer Cheese

Ingredients

  • 8 oz. Camembert or Brie cheese, rind removed
  • 4 oz. Cream Cheese softened
  • 4 oz. Butter softened
  • 1 small Onion finely chopped
  • 1 clove Garlic minced
  • 2 tsp. Caraway Seeds
  • 1 tsp. Paprika
  • Salt & Pepper to taste
  • ¼ German Wheat Beer more or less to taste
  • Fresh Chives chopped for garnish

Instructions

  • In a large mixing bowl, combine Camembert or Brie cheese, cream cheese, and butter. Mash the mixture with a fork until well-blended.
    8 oz. Camembert, 4 oz. Cream Cheese, 4 oz. Butter
  • Add the finely chopped onion, minced garlic, caraway seeds, and paprika to the cheese mixture. Season with salt and pepper to taste. Mix thoroughly.

  • Gradually add the German wheat beer to the mixture, a little at a time, until the desired consistency is achieved. The spread should be smooth and creamy but not too runny.
    ¼ German Wheat Beer
  • Cover the bowl with plastic wrap and refrigerate for at least two hours, allowing the flavors to meld together.
  • When you're ready to serve, transfer the Obatzda to a serving dish and garnish with chopped chives. Enjoy with pretzels, crusty bread, or your favorite crackers.
