In a large mixing bowl, combine Camembert or Brie cheese, cream cheese, and butter. Mash the mixture with a fork until well-blended.
8 oz. Camembert, 4 oz. Cream Cheese, 4 oz. Butter
Add the finely chopped onion, minced garlic, caraway seeds, and paprika to the cheese mixture. Season with salt and pepper to taste. Mix thoroughly.
1 small Onion, 1 clove Garlic, 2 tsp. Caraway Seeds, 1 tsp. Paprika, Salt & Pepper
Gradually add the German wheat beer to the mixture, a little at a time, until the desired consistency is achieved. The spread should be smooth and creamy but not too runny.
¼ German Wheat Beer
Cover the bowl with plastic wrap and refrigerate for at least two hours, allowing the flavors to meld together.
When you're ready to serve, transfer the Obatzda to a serving dish and garnish with chopped chives. Enjoy with pretzels, crusty bread, or your favorite crackers.
