Ingredients

For the Filling:

  • 4 medium Apple tart, peeled, cored, and diced
  • 1 tbsp. Lemon Juice
  • ¼ Granulated Sugar
  • 2 tsp. Ground Cinnamon
  • ¼ tsp. Ground Nutmeg
  • 1 tbsp. All-Purpose Flour

For the Pastry:

  • 2 cups All-Purpose Flour plus extra for dusting
  • 1 tbsp. Granulated Sugar
  • ½ tsp. Salt
  • 1 cup Unsalted Butter cold, cut into small cubes (= 2 sticks)
  • 1 large Egg beaten, for egg wash
  • 4-6 tbsp. Water ice cold

Instructions

Prepare the Filling:

  • In a mixing bowl, toss the diced apples with lemon juice, sugar, cinnamon, nutmeg, and flour until evenly coated. Set aside.

Make the Pastry:

  • In a separate large bowl, whisk together the flour, sugar, and salt.

  • Cut in the butter using a pastry blender or two forks until the mixture resembles coarse crumbs.

  • Gradually add ice water, a tablespoon at a time, mixing until the dough begins to come together.

  • Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Assemble the Turnovers:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  • Cut out 8 circles, each about 6 inches in diameter.
  • Spoon a portion of the apple filling onto one half of each circle, leaving a small border around the edge.
  • Fold the dough over the filling to form a half-moon shape and crimp the edges to seal.

Bake:

  • Brush the turnovers with the beaten egg for a golden finish.
