Ingredients

Dough

  • 4 cups all-purpose flour
  • 1 packet active dry yeast about 2 1/4 tsp
  • 1 cup milk lukewarm
  • 1/3 cup granulated sugar
  • 4 tbsp unsalted butter melted and cooled
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Filling and Assembly

  • 3/4 cup jam or preserves apricot, plum, or your choice
  • 4 tbsp unsalted butter melted (for dipping)
  • Powdered sugar for dusting

Instructions

  • Activate the Yeast: In a small bowl, combine lukewarm milk, a teaspoon of sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.

  • Prepare the Dough: In a large mixing bowl, combine flour, remaining sugar, salt, melted butter, eggs, vanilla extract, and the yeast mixture. Mix until a soft dough forms.

  • Knead the Dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5 minutes.
  • First Rise: Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  • Shape the Buns: Punch down the dough and divide it into 12 equal pieces. Flatten each piece into a small circle, place a teaspoon of jam in the center, and pinch the edges to seal.
  • Assemble: Dip each bun in melted butter and place seam-side down in a greased 9x13-inch baking dish, leaving a little space between them.
  • Second Rise: Cover the dish and let the buns rise for another 20-30 minutes until puffed.
  • Bake: Preheat your oven to 350°F (180°C). Bake the buns for 25-30 minutes or until golden brown.
  • Serve: Let them cool slightly, dust with powdered sugar, and enjoy warm!

Notes

  • Storage: Store leftover Buchteln in an airtight container at room temperature for up to 2 days.
