Austrian Pancakes - Palatschinken

Ingredients

  • 1 cup All-Purpose Flour
  • 2 large Eggs
  • cup Whole Milk
  • 1 tbsp. Granulated Sugar
  • ½ tsp. Salt
  • 2 tbsp. Unsalted Butter melted, for the pan

For the Filling

  • Your choice of jam, fresh fruits or Nutella

Instructions

  • In a large bowl, combine the flour, eggs, milk, sugar, and salt. Whisk until you have a smooth batter.
    1 cup All-Purpose Flour, 2 large Eggs, 1½ cup Whole Milk, 1 tbsp. Granulated Sugar, ½ tsp. Salt
  • Heat a non-stick frying pan or well-seasoned cast-iron skillet over medium heat. Add a small amount of melted butter to lightly coat the pan.
    2 tbsp. Unsalted Butter
  • Pour a ladleful of batter into the pan, swirling it around until the bottom of the pan is covered with a thin layer of batter.
  • Cook the pancake for about 2 minutes, or until the bottom is golden brown. Flip the pancake using a spatula and cook the other side for another minute, or until it's also golden brown.
  • Remove the pancake from the pan and repeat the process with the remaining batter. Remember to add more butter for each pancake.
  • Once all the pancakes are cooked, add your chosen filling to each one. Spread the filling over the pancake, then roll it up.
    Your choice of jam, fresh fruits or Nutella
  • Serve your delicious Austrian Palatschinken immediately. Enjoy the delightful taste of this classic Austrian treat!
